Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large mixing bowl, beat the softened cream cheese and butter together until smooth.
  • Gradually add the sugar substitute while continuing to mix.
  • Add the eggs one at a time, mixing well after each addition.

Mixing Dry Ingredients

  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
  • Stir in the alcohol-free vanilla extract.

Baking

  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
