Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the peanut butter, sugar substitute, and egg. Mix until smooth and well-blended.
  • Using a tablespoon, scoop out balls of dough and place them on a baking sheet lined with parchment paper.
  • Gently flatten each mound with the back of a fork to create a criss-cross pattern.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and let them cool on a wire rack before enjoying.

Notes

To keep your cookies fresh, store them in an airtight container at room temperature for about a week. These cookies freeze well; use parchment paper between layers to prevent sticking. For a softer texture, underbake slightly. Consider adding dark chocolate chips or chopped nuts for extra flavor.
