Ingredients

For the Roasted Sweet Potatoes

  • 4 small sweet potatoes, peeled and diced Cut into roughly 1-inch cubes for even roasting.
  • 1 tablespoon avocado oil Can substitute with olive oil.
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon salt For lower sodium, reduce added salt.
  • 0.25 teaspoon black pepper

For the Beef and Toppings

  • 1 lb lean ground beef (90/10 or 93/7) Alternative: ground turkey or plant-based crumbles.
  • 1 bag shredded lettuce (8 oz)
  • 1 medium red onion, thinly sliced
  • 1 pint diced tomatoes (10 oz)
  • 0.5 cup pickles, diced
  • to taste your favorite burger or ranch-style sauce See tips for a quick special sauce mix.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and dice sweet potatoes into bite-sized pieces and place them in a large bowl.
  • Add avocado oil, garlic powder, onion powder, salt, and pepper to the bowl. Toss until the potatoes are evenly coated.

Roasting

  • Spread the seasoned potatoes in a single layer on a lined baking sheet.
  • Roast for 30–40 minutes, stirring once halfway through, until edges are browned and tender.

Cooking the Beef

  • While potatoes roast, heat a skillet over medium. Add the ground beef and break it apart.
  • Cook the beef about 6–8 minutes until browned and no longer pink.
  • Season the cooked beef with a splash of Worcestershire sauce, plus garlic powder, onion powder, salt, and pepper. Stir to combine and simmer for 1–2 minutes.

Assembly

  • Assemble bowls: place shredded lettuce in each bowl.
  • Top with roasted sweet potatoes, seasoned beef, sliced red onion, diced tomatoes, and pickles.
  • Drizzle with your favorite sauce and serve immediately.

Notes

Optional: For extra caramelization, broil for 1–2 minutes at the end—watch closely. Don’t overcrowd the baking sheet; crowding steams rather than roasts.
