Ingredients

For the taco filling

  • 1 cup cooked and crumbled ground beef leftover or freshly crumbled and browned
  • 1 packet taco seasoning about 1 oz
  • 1/2 cup ranch dressing use full-fat for best flavor
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup diced tomatoes seeded if very watery
  • 1/4 cup chopped green onions white and green parts

For serving

  • 1 package sturdy tortilla chips look for restaurant-style or kettle chips

Instructions

Cooking

  • Heat a skillet over medium heat and add your cooked, crumbled ground beef. Sprinkle the taco seasoning over the beef and add a splash of water (per package directions). Stir and cook until the seasoning is well distributed and the beef is warmed through, about 2–3 minutes. Remove from heat and let cool slightly.
  • In a mixing bowl, combine the seasoned beef, ranch dressing, shredded cheese, diced tomatoes, and chopped green onions. Stir until everything is evenly mixed. Taste and adjust — add a pinch of salt or extra ranch if you want it creamier.
  • Arrange the tortilla chips on a serving platter in a single layer or slightly overlapping. Choose chips with a firm base so they hold the topping.
  • Spoon a small mound of the taco mixture onto each chip. Aim for bite-sized portions so guests can eat them in one or two bites.
  • Serve immediately so the chips remain crisp. If you must wait, keep the topping chilled and assemble just before serving.

Notes

For a vegetarian version, swap cooked seasoned black beans or textured vegetable protein for the beef. Dairy-free: use a dairy-free ranch alternative and vegan shredded cheese.
