Ingredients

Main ingredients

  • 1 lb lean ground beef (90/10 or alternatives like ground turkey or plant-based crumble) Use lean beef for a healthier option.
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp hoisin sauce Adds sweetness and depth; may substitute with sweet chili sauce + splash of soy if needed.
  • 1 cup shredded carrots Pre-shredded saves time.
  • 1/2 cup chopped bell peppers Mixed colors add visual appeal.
  • to taste fresh basil leaves Thai basil is ideal, but sweet basil works.
  • as needed rice paper wrappers Keep them covered with a damp towel to prevent drying.

Optional extras

  • to taste chopped cilantro
  • to taste thin rice noodles Adds bulk.
  • to taste crushed peanuts For crunch.
  • to taste lime wedges For serving.

Instructions

Preparation

  • Heat a skillet over medium-high heat and add the ground beef, breaking it up with a spatula.
  • When the beef is mostly browned, stir in the soy sauce and hoisin sauce. Cook until no pink remains and the liquid has mostly evaporated, about 6-8 minutes.
  • Add shredded carrots and chopped bell peppers to the pan, sautéing for 2-3 minutes until the vegetables are softened but still have some bite.
  • Remove the pan from heat and let the mixture cool slightly.

Assembly

  • Fill a shallow bowl with warm water. Dip one rice paper wrapper for 8-12 seconds until just pliable.
  • Lay the softened wrapper flat. Place a small amount of the beef mixture in the lower third, top with 2-3 fresh basil leaves, fold the sides over, then roll tightly from the bottom to seal.
  • Repeat with remaining wrappers and filling. Serve immediately or cover with a damp towel if holding for a short time.

Notes

Serve with a dipping sauce like hoisin-peanut sauce or sweet chili for enhanced flavors. Can also be made ahead by preparing the beef mixture and rolling just before serving.
