Ingredients
  

For the tzatziki

  • 1 medium English cucumber, sliced thinly Use a 3-inch segment for crunch.
  • 0.75 cup Plain Nonfat Greek yogurt Provides the creamy base.
  • 1 tablespoon Olive oil For a luscious drizzle.
  • 0.13 teaspoon Salt To enhance flavors.
  • 16 leaves Fresh mint leaves Adds a refreshing herbal note.

Preparation

  • Slice the cucumber piece into quarters lengthwise, then cut each quarter into thin slices crosswise.
  • Scatter half of the cucumber pieces onto a plate or shallow bowl for a nice base.
  • Dollop the Greek yogurt onto the cucumbers and spread it evenly with the back of a spoon.
  • Attractively arrange the remaining cucumber slices on top of the yogurt.
  • Drizzle with olive oil, sprinkle with salt, and top with fresh mint leaves before serving.

Notes

Serve chilled. Store in an airtight container in the refrigerator for 3-5 days. Can be enjoyed cold or incorporated into wraps or salads.
