  • 28 ounces crushed tomatoes Can use whole canned tomatoes crushed by hand
  • 1 teaspoon Italian seasoning Or a mix of oregano, basil, thyme, and red pepper flakes
  • 8 ounces lasagna noodles, broken into pieces Regular or no-boil; if using no-boil, watch texture
  • 2 cups spinach or kale Spinach wilts quickly; kale adds a chewy bite

For Serving

  • 1 cup ricotta cheese For topping and creaminess
  • 1 cup mozzarella cheese, shredded Melty finishing cheese
  • 1/2 cup Parmesan cheese, grated Sharp, salty finish
  • to taste salt and pepper To taste

Instructions

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, carrots, celery, and bell pepper. Sauté until soft and the onion is translucent, about 6-8 minutes.
  • Pour in vegetable broth and crushed tomatoes. Stir in Italian seasoning and season with salt and pepper. Bring to a gentle simmer.

Cooking

  • Break lasagna noodles into bite-sized pieces and add to the pot. Increase heat to boil, then reduce to simmer and cook until noodles are tender, about 8-12 minutes.
  • Stir in spinach or chopped kale and cook until wilted, about 1-4 minutes depending on greens.

Serving

  • Serve hot, topped with ricotta, mozzarella, and Parmesan. Garnish with fresh basil or a drizzle of olive oil.

Notes

Store leftovers in airtight containers for 3-4 days. Freezing is possible for up to 3 months without fresh ricotta. Reheat on stovetop or microwave, adding broth or water if needed.
