Ingredients

Main Ingredients

  • 4 pieces pickle spears (dill or bread-and-butter, drained and patted dry) Quartered dill spears are classic; thinner spears melt into the cheese better.
  • 2 cups shredded cheddar cheese (about 8 ounces) Sharp cheddar melts nicely; mild cheddar works too. Colby or Monterey Jack are good alternatives.
  • 1/2 cup ranch dressing Optional, for dipping.

Instructions

Preparation

  • Pat the pickle spears dry with a paper towel to remove excess brine.
  • Heat a non-stick skillet over medium-high heat until hot but not smoking.

Cooking

  • For each chickle, sprinkle about 1/4 cup shredded cheddar into the pan and quickly spread it to form a round.
  • Place one pickle spear in the center of the melted cheese round and let it sizzle for about 1 minute.
  • Using two spatulas, gently fold the melted cheddar over the pickle, enclosing it and forming a long roll.
  • Rotate and press gently to brown lightly to your liking, then remove from the pan.

Notes

Serve warm and gooey. Presentation ideas include arranging on a platter with dipping sauces and using toothpicks for convenience. For kids, cut each chickle into thirds for bite-sized pieces. Keep finished chickles warm in a 200°F (95°C) oven if cooking in batches.
