Salad Base

  • 4 cups Mixed greens (spring mix, arugula, or baby spinach)
  • 1 cup Cherry tomatoes, halved
  • 1 medium Cucumber, sliced or diced
  • 1 small Red onion, thinly sliced
  • 1 cup Pomegranate seeds (arils) Fresh for best texture
  • 1/2 cup Walnuts, toasted Toast in a dry skillet for 3–5 minutes
  • 1/2 cup Feta cheese, crumbled

Honey Mustard Dressing

  • 2 tablespoons Honey
  • 1 tablespoon Mustard (Dijon or whole-grain)
  • 3 tablespoons Olive oil (extra-virgin for best flavor)
  • 1 pinch Salt To taste
  • 1 pinch Freshly ground black pepper To taste

Instructions
 

Preparation

  • Place the mixed greens in a large serving bowl.
  • Add halved cherry tomatoes, sliced cucumber, and thinly sliced red onion.
  • Scatter pomegranate seeds, toasted walnuts, and crumbled feta over the top, keeping ingredients layered.

Dressing

  • In a small bowl or jar, whisk together honey, mustard, olive oil, salt, and pepper until emulsified.
  • Taste and adjust, adding more honey for sweetness or more mustard for tang.

Serving

  • Drizzle the dressing over the salad just before serving.
  • Gently toss to coat the ingredients evenly without bruising the greens.
  • Serve immediately to preserve the crunch.

Notes

For customization, swap walnuts for pecans or almonds, and use goat cheese instead of feta. For a vegan version, substitute honey with maple syrup and use a vegan feta alternative. Make the dressing ahead for convenience.
