Ingredients

Cowboy Butter

  • 5 Tbsp. salted butter, softened
  • 1 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh chives
  • 1/2 tsp. grated lemon zest
  • 1 tsp. lemon juice
  • 1 tsp. dijon mustard

Filets

  • 2 pieces beef filet steaks (8 to 10 ounces, about 2 inches thick)
  • 1 Tbsp. olive oil
  • 2 slices turkey bacon
  • to taste Kosher salt
  • to taste Black pepper

Instructions

Prepare Cowboy Butter

  • Mash 4 tablespoons of softened butter with parsley, chives, lemon zest, lemon juice, and mustard in a bowl.
  • Scoop the mixture onto plastic wrap, form it into a log, and refrigerate until firm—this should take about 30 minutes.

Prepare and Cook Steaks

  • Preheat your oven to 450 degrees F.
  • Season the steaks generously with kosher salt and black pepper.
  • Wrap each filet with a slice of turkey bacon, securing it with a toothpick.
  • Heat the remaining tablespoon of olive oil and any leftover butter in a cast-iron skillet over medium-high heat.
  • Sear the steaks until they develop a golden brown crust, about 1 minute per side.
  • Transfer the skillet to the preheated oven and cook for 7 to 10 minutes for a medium-rare finish.
  • Once done, let the filets rest for 5 minutes before serving them with a generous slice of the cowboy butter on top.

Notes

Store leftover filets in an airtight container in the refrigerator for up to three days. Reheat in a skillet on low heat to prevent drying out. To vary the cowboy butter, you can include different herbs such as dill or thyme.
