  • 1 small head cabbage, chopped Any type of cabbage can be used.
  • 1 medium onion, diced
  • 2 medium carrots, sliced Feel free to adjust the quantity.
  • 3 cloves garlic, minced Adjust to taste.
  • 4 cups beef broth Homemade broth enhances the flavor.
  • 1 can diced tomatoes
  • 1 tsp thyme
  • to taste Salt and pepper Adjust to your preference.
  • 2 tbsp olive oil For sautéing.

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onion and minced garlic, sautéing until they begin to soften and turn translucent.
  • Incorporate the ground beef, cooking it thoroughly until it browns.
  • Mix in the chopped cabbage and sliced carrots, along with thyme, salt, and pepper.
  • Pour in the beef broth and canned diced tomatoes, stirring to combine.
  • Bring the mixture to a rapid boil, then reduce the heat. Let it simmer for about 30 minutes or until the vegetables are tender.
  • Serve hot and enjoy every spoonful!

Notes

Leftovers can be stored in an airtight container for up to 3 days refrigerated, or frozen for up to 3 months. For variations, use ground turkey or chicken for a lighter option, or add beans for a vegetarian twist.
