Keto Teriyaki Chicken

A delicious twist on classic teriyaki, this Keto Teriyaki Chicken is perfect for a low-carb lifestyle, easy to prepare, and packed with flavor.

Ingredients
  

For the Teriyaki Sauce

  • 1/3 cup soy sauce, tamari, or liquid aminos Use tamari for a gluten-free option.
  • 2 tablespoons avocado oil
  • 2 tablespoons brown sugar substitute
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon tomato paste
  • 1/2 teaspoon arrowroot powder Adjust for thickness preference.
  • 1/4 teaspoon ground ginger or 1/2 teaspoon freshly grated ginger
  • 1/2 teaspoon sesame seeds (optional)

For the Chicken

  • 1 pound boneless, skinless chicken thighs or chicken breast
  • Assorted vegetables optional Add your favorite vegetables for added nutrition.

Instructions
 

Prepare Teriyaki Sauce

  • In a small bowl, combine the soy sauce, avocado oil, brown sugar substitute, apple cider vinegar, tomato paste, garlic, arrowroot powder, ginger, and sesame seeds (if using). Mix until combined and set aside.

Cook Chicken

  • Lightly coat a skillet with cooking spray and heat it over medium-high heat. Add the chicken and cook on each side for 3-4 minutes or until cooked through.
  • Remove the chicken from the skillet and add the vegetables, if desired. Cook until softened.
  • Return the cooked chicken to the skillet and pour in the teriyaki sauce. Allow it to cook over medium heat until the sauce is bubbly and thickened.

Instant Pot Preparation

  • Mix the ingredients for the teriyaki sauce, leaving out the arrowroot powder for now. Place the chicken and vegetables in the Instant Pot, adding most of the sauce (reserve a tablespoon or two).
  • Pressure cook on high for 10 minutes. Let the pressure release naturally for 5 minutes before releasing the rest of the pressure.
  • Mix the remaining sauce with the arrowroot powder and add to the cooked chicken and stir-fried vegetables. Using sauté mode, cook until the sauce is bubbly and thickened.

Notes

For a deeper flavor, let the chicken marinate in the teriyaki sauce for at least 30 minutes before cooking. Experiment with different vegetables for customization. You can also swap the protein for tofu or shrimp.
