Mexican Coleslaw

Ingredients
  

For the Dressing

  • 1/4 cup avocado oil Can substitute with other oils.
  • 1/2 whole jalapeño, sliced Adjust according to heat preference.
  • 1 clove garlic, minced
  • 1 tablespoon lime zest
  • 2-3 tablespoons lime juice Fresh lime juice preferred, but bottled can be used.
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt

For the Coleslaw

  • 1 (14 oz) bag coleslaw mix or 1 head of cabbage, sliced
  • 1/4 cup red onion, thinly sliced
  • 1 cup chopped cilantro Can substitute with parsley.

Instructions
 

Preparation

  • In a small bowl, combine the avocado oil, jalapeño slices, minced garlic, lime zest, lime juice, ground cumin, and salt. Stir well.
  • Let the dressing rest for 30 minutes or even overnight to infuse the flavors.
  • Before serving, remove the jalapeños from the dressing.
  • In a large bowl, toss the coleslaw mix, sliced red onion, and chopped cilantro with the dressing. Mix until well coated.

Notes

Store in an airtight container in the refrigerator. Best enjoyed within 2-3 days.
