Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar substitute (like erythritol or stevia)
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/4 cup melted coconut oil
  • 2 large eggs should be at room temperature
  • 1 teaspoon alcohol-free vanilla extract

Optional Ingredients

  • 1/2 cup sugar-free chocolate chips for additional chocolaty flavor

Preparation

  • Preheat your oven to 350°F (180°C).
  • In a bowl, mix together the almond flour, cocoa powder, and salt until well combined.
  • In another bowl, whisk the eggs, melted coconut oil, sugar substitute, and alcohol-free vanilla extract together until smooth.
  • Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  • If desired, fold in the sugar-free chocolate chips.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes, or until slightly firm to the touch.
  • Allow the cookies to cool for a few minutes before enjoying.

Notes

These cookies can be served warm or cooled. They pair well with whipped cream or low-sugar ice cream. Store in an airtight container and consume within a week, or freeze for longer storage.
