Casserole Ingredients

  • 0.5 cup green onions, chopped
  • 2 cups skim milk nonfat milk can be used
  • 1 tsp mustard powder
  • 0.5 tsp salt optional
  • 0.25 tsp black pepper
  • 16 oz egg substitute can be substituted with about six regular eggs
  • 4 slices whole wheat bread, cut into 1/2-inch cubes can be substituted with gluten-free bread
  • 3 pieces diced precooked turkey breakfast beef sausage patties or other protein of choice
  • 0.25 cup reduced-fat shredded cheddar cheese can use different types of cheese

Preparation and Baking

  • Preheat your oven to 350°F (175°C) and coat a 9x13-inch baking dish with nonstick cooking spray.
  • In a medium bowl, whisk together the milk, green onions, mustard powder, salt (if using), black pepper, and egg substitute until well combined.
  • Lay the whole wheat bread cubes and diced turkey sausage evenly across the bottom of the baking dish.
  • Pour the egg mixture over the bread and beef sausage, making sure to cover everything evenly. Top with the cheddar cheese.
  • Cover the pan with aluminum foil and bake for 20 minutes. After that, remove the foil and bake for an additional 40 minutes until the top is golden and set.
  • Remove from the oven and allow it to cool for 20 minutes before slicing into 10 equal pieces.

Notes

To serve this casserole, consider pairing it with a fresh green salad or a fruit platter. You can also add salsa or avocado on the side for extra zest.
