01Why this one

Beef stroganoff is really a sour cream and mushroom dish that happens to be served on noodles. Take away the noodles and it is still completely itself.

This slow cooker version uses sirloin strips, lots of mushrooms, beef broth and Dijon, finished with sour cream. Serve it over buttered cabbage ribbons for about 6g net carbs per serving.

Why You’ll Love This Keto Slow Cooker Beef Stroganoff

  • Creamy, rich and comforting.
  • No flour: xanthan gum thickens the sauce.
  • Tender beef without standing over the stove.
  • Cabbage ribbons hold the sauce well.

How This Recipe Comes Together

The beef strips are browned in butter, then go into the slow cooker with mushrooms, onion, garlic, broth and Dijon for seven hours on low. At the end the sauce is thickened, the slow cooker is switched off, and warmed sour cream is stirred through.

What to Serve With It

Serve over buttered cabbage ribbons, shirataki noodles, zucchini noodles or cauliflower mash.

How to Store and Reheat

Refrigerate for up to 3 days and reheat gently without boiling. Sour cream sauces can separate when frozen, so this is best eaten fresh.

FAQs

Why did my sauce split?

The sour cream was added too cold or the sauce was boiling. Temper it and turn the heat off.

Can I use Greek yogurt?

Full-fat Greek yogurt works, tempered the same way.

Can I use ground beef?

Yes. Brown and drain it first, and cook for 4 hours on low.
