Keto Hot Crab Dip
01Why this one

If you’re planning keto party food appetizers for the holidays, start with a hot crab dip. It’s one bowl, one baking dish, and about thirty minutes, and it comes out of the oven bubbling at the edges with a golden, cheesy top that people will scrape the dish to get at.

I make mine with plenty of lump crab, cream cheese, a little sour cream and mayo, and a handful of sharp cheddar and parmesan. Green onion and lemon keep it bright, so it never tastes heavy. Nothing in it needs a cracker, which is the whole point.

Where hot crab dip comes from

Crab dip is a thick, creamy dip built on cream cheese and lump crab meat, and it’s often called Maryland crab dip. That name points back to the Chesapeake Bay, home of the blue crab, though nobody has pinned down exactly who stirred the first batch. What’s clear is how it’s served: hot, from the oven, as an appetizer, usually with something to scoop it up. Some versions get a seasoning blend like Old Bay or a few shakes of hot sauce, and plenty of cooks top it with cheese so it browns.

You’ll find it at cookouts, at football parties, and on the appetizer table at the holidays. In a lot of houses, there’s one dip that always gets set out first and gets scraped clean first. Crab dip is that dip for plenty of families.

Why it works as keto party food

A party table is where low carb eating usually gets quiet. The chips, the crackers, the little toasts, they’re all built to carry a dip, and the dip is the one thing that was never the problem. Crab, cream cheese and cheese are naturally low in carbs. The only thing to change is what you scoop it with.

If you like the cream cheese and crab flavor of a crab rangoon, this is a keto crab rangoon dip with the fried wonton left out. Green onion, a little garlic and lemon give it that same savory, creamy bite. It just doesn’t need the wrapper.

I cook every recipe in my own kitchen first, and the one thing I check on a dip like this is whether it holds together on the spoon. This one does. It’s thick enough to sit on a cucumber slice without sliding off, and it still stays soft in the middle.

What to dip, and how to build the table

Cold, crisp dippers work best because they push back against something so rich. Thick cucumber rounds, celery sticks and little cups of endive are my first picks. For crunch, bake your own cheese crisps from shredded parmesan or cheddar: they’re sturdy enough for a heavy scoop, and they’re just cheese.

On a holiday table, I like to put this dip next to something green and something sweet. Our low carb Christmas creamed spinach is the side I’d set beside it for the main meal, and if your crowd likes a spicier dip, my buffalo chicken dip is the other hot dip I put on the same table. Between the two, nobody goes looking for chips. If you want more ideas, our other keto holiday recipes appetizers follow the same rule: cheese, protein, and something crisp to scoop with.

How it became keto and high protein

Most hot crab dips are already low carb. The sneaky carbs come from the toppings and the dippers: a breadcrumb topping, a baguette, a pile of tortilla chips. So the topping here is plain parmesan and cheddar, and the scoops are vegetables and cheese crisps.

I used a full pound of lump crab for the batch, which is what makes it taste like crab instead of cream cheese with a hint of seafood. Run the numbers through the USDA’s FoodData Central and a serving of about a third of a cup comes to 11 grams of protein and 2 grams of net carbs, with no sugar or flour anywhere. That is well under the 5-gram line I hold appetizers to before I call something keto. The count is for the dip alone, so add your dippers on top.

Crab is also one of the easier seafoods to feel good about serving a crowd. The FDA lists crab on its Best Choices list of fish and shellfish, the lowest-mercury group, so it’s a friendly pick for a table with all kinds of guests. (Shellfish is also a top allergen, so keep a label on the dish if you’re feeding a crowd you don’t know.)

04After dinner

Swaps, make-ahead and leftovers

Fridge

Canned lump crab, very well drained, in place of refrigerated. Squeeze it dry in a clean towel so the dip doesn’t turn watery.

Good to know

Gruyère or smoked gouda for half of the cheddar, for a deeper flavor.

Good to know

Cayenne or extra hot sauce if you like it spicy.

Reheat1 TO 2 HOURS

Slow cooker: stir everything together and warm it on low in a small slow cooker for 1 to 2 hours, then keep it on warm for the party.

FridgeTWO HOURS

You can mix the dip a day ahead, cover it and keep it in the fridge, then bake it straight from the fridge with about five extra minutes. A hot dip is a classic way to lose track of the clock, so mind the two-hour rule. The FDA’s guidance on serving seafood safely says perishable seafood shouldn’t sit out for more than two hours, or one hour when it’s hot out. For a long party, bake a second small dish and swap it in. Leftovers go in the fridge in a covered container for 3 to 4 days, and I reheat them in the oven or a toaster oven until hot all the way through (165°F) so the top stays crisp. I don’t freeze this one; the cream cheese gets grainy.

Keto crab dip questions

How many carbs are in this keto hot crab dip?

2 grams of net carbs per serving, for twelve servings of about a third of a cup. The numbers are for the dip only, so count whatever you dip into it.

Can I make this keto hot crab dip ahead of time?

Yes. Mix it, cover it and refrigerate for up to a day, then bake it for five to ten minutes longer, until it’s bubbling around the edges.

What’s the best thing to serve with a keto crab dip?

Cucumber rounds, celery, endive leaves or homemade cheese crisps. They’re crisp enough to carry the dip and none of them add real carbs.

Put it out hot, hand someone a stack of cheese crisps, and save yourself the last scoop before it’s gone.
