Beef stew is the ultimate slow cooker meal, and the only thing keeping it from being keto is the potatoes. Radishes solve that. After eight hours in the pot they lose their peppery bite and turn soft and mild, very much like new potatoes.

The rest is classic: well-browned beef, mushrooms, celery and onion in a tomato and beef broth, thickened with xanthan gum instead of flour. It works out at about 7g net carbs and 38g protein per serving.

What You’ll Need

Beef stew meat
Chuck cut into 1.5 inch cubes is best.
Radishes
Halved. They stand in for potatoes.
Mushrooms and celery
Add body and flavour.
Tomato paste and beef broth
The base of the gravy.
Xanthan gum
Thickens the stew at the end without flour.

How This Recipe Comes Together

The beef is browned in batches, then goes into the slow cooker with the radishes, mushrooms, celery, onion and garlic. Broth mixed with tomato paste goes over the top with rosemary and a bay leaf. After eight hours on low the gravy is thickened with a little xanthan gum.

Do the radishes really taste like potatoes?

They lose their sharpness and take on a mild, soft texture. They are not identical, but they fill the same role in a stew.

Can I add carrots?

A small carrot adds a few grams of carbs to the pot. Leave them out for the lowest carb count.

Can I use turnips?

Yes. Turnips work too and have a little more carbs than radishes.
