Low Carb Chicken Fajita Meal Prep Bowls
01Why this one

If you want low carb high protein meal prep that still tastes like dinner by Thursday, pull up a stool. These chicken fajita bowls are what I’d hand you first. Chili-lime chicken strips, peppers browned at the edges, and golden cauliflower rice, packed into four containers. Each one has 36 grams of protein.

Picture the skillet. The chicken hits the hot pan and the whole kitchen smells like lime, cumin and chili powder. The peppers go in next and start to char at the edges. That smell is the reason I picked fajitas for meal prep. Plain chicken on plain rice gets sad by midweek. This doesn’t. The lime and the char hold up in the fridge, and the bowls taste like something you chose, not something you’re finishing off.

Where fajitas come from

The word is Spanish. A faja is a belt, and a fajita is a little belt. It was named for skirt steak, the long, thin strip of beef the dish was first made with. It comes out of South Texas cattle country, where Mexican ranch hands were given the less prized cuts of the animal as part of their pay. They learned to make that meat wonderful over a fire, marinated and charred, then wrapped in a warm tortilla. Restaurants later carried the sizzling platter to the rest of the country.

What stuck is the method, and it suits a busy cook. Marinate the meat, get the pan very hot, and cook the meat with the peppers and onions until the edges catch. I use chicken thighs here. They stay juicy through a few days in the fridge in a way breast meat often doesn’t. That matters when a bowl sits in a container until Thursday.

At our table in the new year

I’m a mom cooking for two kids, and every recipe on this site gets cooked in my own kitchen first. These bowls are one I want ready for the weeks right after the holidays. The cookies are packed away, the table has been heavy for a while, and most of us want something bright and simple. A row of four containers on the fridge shelf is a good answer to “what’s for dinner?” It means nobody is staring into the fridge at six o’clock.

I hold every recipe to one bar: if a dish only works when I announce what’s missing, it doesn’t make the site. So the fajita flavor stays loud, and the swaps stay quiet. Nobody needs to know the rice is cauliflower. They just need to reach for the container with the most peppers.

If you like a prepped dinner in the rotation, my Santa Fe chicken meal prep bowls are close cousins to these. And when January turns properly cold, my keto chili is the big pot I make next.

How it became low carb and high protein

The restaurant plate comes with flour tortillas, rice and often beans. I kept what everyone loves, the seasoned chicken and the browned peppers, and swapped the rice for cauliflower rice. I cook it until the water is gone and the edges turn golden. Each bowl comes to about 36 grams of protein and about 9 g net carbs (unrounded USDA values), and every figure comes from the USDA FoodData Central database rather than a guess. A spoonful of sour cream and a few slices of avocado keep it filling, so you aren’t hunting for a snack at three o’clock.

Season the chicken first, before anything else. It gets its ten minutes in the lime and spices while you slice the peppers. That small wait is the difference between chicken that tastes seasoned and chicken that just tastes salty. For the rice, use a hot, wide pan and leave it alone for a minute or two between stirs. Frozen cauliflower rice works too. Squeeze it dry in a clean towel first, or you’ll end up with porridge.

02Before you cook

Swaps

  • Chicken breast instead of thighs: slice it thin and pull it from the pan the moment it hits 165°F, so it doesn’t dry out.
  • Flank or skirt steak for a closer-to-original fajita, seared hard and sliced across the grain.
  • Shrimp, cooked for 2 to 3 minutes so it stays tender.
  • Shredded cheddar or Monterey Jack in place of sour cream.
  • A pinch of cayenne or a sliced jalapeño in the pan for more heat.

04Recipe notes

  1. 01Each bowl has about 9 g net carbs, from unrounded USDA values: 15.7 g total carbohydrates minus 6.3 g fiber = 9.4 g net. The nutrition box shows whole numbers (16 total, 6 fiber), so 16 minus 6 reads as 10 there, but the exact net is about 9. Sour cream and avocado are included in the numbers; store them separately. Keeps 3 to 4 days in the fridge.

04After dinner

Make ahead, storing and reheating

Pack the chicken, peppers and cauliflower rice into four containers. Let them cool, then get them into the fridge within two hours. They keep 3 to 4 days, which matches the USDA’s leftovers guidance, and it also says to reheat to 165°F. Keep the sour cream and avocado in a small separate container and add them after reheating, because avocado turns brown within a day. A squeeze of fresh lime at the table wakes everything back up. Plan to eat all four by Thursday to be safe.

Chicken fajita meal prep questions

How long do these high protein meal prep bowls keep?

Three to four days in the fridge in sealed containers. If you want to be safe, eat all four by Thursday.

Can I freeze them?

You can freeze the chicken and peppers for a few months. Cauliflower rice gets watery after thawing, so make fresh rice on the day if you can.

Is this a good high protein dinner meal prep for the week?

It is built for it. Each bowl has 36 grams of protein, the flavors hold up well to reheating, and you can change the topping each day so the week never feels repetitive.

Reheating is the part people worry about, and it’s easy. A microwave works, or a skillet over medium heat with a splash of water. Stir once halfway so the chicken heats through to the middle. Then top it with the cold sour cream and avocado, and it tastes freshly made.

Tuck a lime wedge into each container, write the day on the lid, and let the week sort itself out.
