The first week of January, the fridge starts to look like a different fridge, and the best high protein lunch meal prep I know starts with one sheet pan of spiced chicken. These chicken shawarma meal prep bowls are what I roast on a Sunday so the rest of the week takes care of itself: lemony, cumin-heavy chicken thighs, warm cauliflower rice, a crunchy cucumber and tomato salad, and a cool little cup of tahini yogurt sauce on the side.

In a lot of houses, the New Year means a fresh start on lunch. The holiday leftovers are gone, school and work start again, and Monday morning comes fast. That’s the morning you want five matching containers lined up on the fridge shelf, lids on, ready to grab on the way out the door.

The smell is what pulls people into the kitchen. Cumin, paprika and turmeric warm up in the oven, the edges of the chicken go dark and crisp, and the whole house smells like a street corner you’d follow your nose to.

Where shawarma comes from

Shawarma is Middle Eastern street food. The traditional way is slow: thin layers of seasoned meat are stacked on a tall vertical spit and turned slowly in front of the heat, and the cook shaves off the browned outside as it crisps. Each bowl gets a full half pound of raw chicken thighs, and the sauce is Greek yogurt with a spoonful of tahini instead of a mayo-style garlic sauce, so even the sauce pulls its weight.
