Keto Slow Cooker Beef and Broccoli
Keto slow cooker beef and broccoli: thin-sliced flank steak in a soy, garlic, ginger and sesame sauce, with the broccoli steamed separately so it stays green.

Slow cooker beef and broccoli is a takeout favourite you can make at home. Thin-sliced flank steak cooks in a soy, garlic, ginger and sesame sauce until tender.
The key is cooking the broccoli separately, so it stays bright green with a little bite. Erythritol replaces brown sugar and xanthan gum replaces cornstarch, for about 7g net carbs per serving.

How This Recipe Comes Together
The sauce is whisked together in the slow cooker and the sliced beef is tossed through it. After five hours on low the beef is tender. The broccoli is steamed separately and stirred in at the end, and the sauce is thickened with xanthan gum. Keep the lid on while it cooks so the slow cooker holds a safe cooking temperature.

What to Serve With It
Serve over cauliflower rice with sesame seeds and green onion. Our original Crockpot Beef and Broccoli uses brown sugar and cornstarch; this version swaps both out. If you like tender slow cooker beef, try these Keto Slow Cooker Short Ribs too.
How to Store and Reheat
Refrigerate for up to 4 days. The broccoli softens on reheating, so store it separately if you can. The beef freezes well for up to 3 months. Cool leftovers and get them into the fridge within 2 hours, as the USDA leftovers guidance recommends.
